ok here are some P3 recipes. more to come later i promise, i am too tired tonight. Call me if there is a recipe you want and its not up here yet. Still coming is... clam dip, chicken alfredo, home-made ice cream, reeses peanut butter filling, breakfast burrito, taco shells, potato salad, coconut shrimp, chicken salad, Rumbi Voodoo Chicken salad, Jalepeno poppers...
* I love the sugar-free reeses, hersheys, russell stover, werthers, crystal light popsicles, and the Jack Sprat bread, and ezzicial tortillas are GREAT!
No bake Cheese cake
- 1 1/2 Cup Whipping Cream - 2 tsp Vanilla
- 3 Tbsp Xylitol sweetner - 1 8 oz cream cheese
Whip Whipping cream (to a butter stage, about cream cheese texture using hand mixer) Add cream cheese, xylitol, and vanilla. Blend until smooth. Refrigerate until thickened. Pour into crust. (I sometimes just eat it plain, i also add more sweetner, i like it sweet!!
Cheesecake (i haven't tried this one yet)
1 c. xylitol
5 pkg. 8 oz cream cheese
3 T whole wheat flour
1 T vanilla
mix with mixer on med. untill well blended
Add: 1 C sour cream, mix well
Add: 4 eggs, one at a time mixing on low just until blended
Poue over crust. Bake for one hour and 10 min. @ 350 or until center is almost set. refrigerate 4 hours before serving
Pie crust
1 C almond flour
2 tbsp butter
2 tbsp xylitol
mix and press into pie pan.
NUTTY Pie crust
6 oz pecan pcs
2 oz walnut pcs
2-4 tbsp butter
2 tbsp xylitol (sweetner of choice)
in food proccessor combine all ingrediants and pulse until reaches desired consistency. Press into pie pan.
Pumpkin Pie
1 can Pumpkin Pie (be sure its 100% pumpkin and not pie mix)
2 eggs
1 can evap milk OR 1 cup fat free milk
1 C sweetner
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
preheat oven to 425 degrees. combine all ingredients and pour into crust. Bake 15 minutes. Reduce heat to 350 and bake 45 minutes. cool completley before serving
* TIP- you can make this pie completley crustless, by pouring into a PAM-sprayed pie dish and following the same cooking instructions.
*OR Bake in the microwave CRUSTLESS on high for 12-15 min. until center is set.
BLT Salad
salad greens
4 slices cooked NSA bacon, diced
1 tomato diced
1 onion chopped
1/2 cucumber peeled and sliced
1 C bean sprouts
1/2 C mozzerella shredded
-combine all ingrediants
Dressing
1/3 C Mayo
1/4 C milk
1 T spicy mustard
1/2 tsp garlic pwdr
black pepper
combine and whisk together
TIP this makes a nice family size side salad or a very large salad entree.
Tuna or Chicken Melt
1 Piece Jack Sprat's bread
1 can tuna, albacore, or chicken
2 T Veganaise (or Mayo)
1/8 onion finely chopped
1/4 avacado thinly sliced
1 slice provolone cheese
mix tuna, onion, and mayo... put on bread and add avacado and cheese. Place in oven on brol for a few minutes until cheese in melted.
Pepperoni Chips
15 pepperoni slices. Place on cookie sheet under broil in the oven. Cook until crisp. dab extra grease off.
